- bulk fermented at room temp 1 day
 - balled and cold fermented for 2 days
 - great dough structure
- could be slightly more hydrated
 
 - dough takes 3+ hours to reach room temp
 - oven takes 2 hours to reach temp
 - used broil for 1st and 2nd bake was too much
- improve:
- 1st bake - regular bake dough and sauce for 2 minutes
 - 2nd bake - broil for 2 minutes with toppings

- used Pizza bubble recipe
 - dough was incredibly wet
- improve: 
- incorporate wet ingredients into flour better at beginning
 
 - added more flour to compensate
 - techniques to improve hydration
